Ker is a small caper-like berry, sangri the long bean of the khejri tree. Both are dried, soaked, and cooked with dried mango and plenty of oil into something sour, chewy and completely unlike anything else. Famine food that became festival food — the clearest example on this map of a cuisine shaped entirely by the absence of water.
