Wheat dough rolled into balls and baked hard in coals or cow-dung cake, cracked open, drowned in ghee, and eaten with a five-lentil dal and a sweet crumbled churma. It is a technique before it is a dish: baati keeps for days without spoiling, which is the whole reason it exists. Placed as an area — this is a household and thali-house staple across the city, not one address.
