The kachori form borrowed wholesale for a sweet: a fried pastry shell filled with mawa, nuts and cardamom, then dunked in sugar syrup. Not old, not courtly, and not remotely subtle. It belongs to the sweet shops of the bazaar and to weddings, and it is on this map because it is genuinely a Rajasthani invention rather than an import.
